提拉米苏代表“带我走”芝士蛋糕:含义是“甜蜜的爱情”。

卡布奇诺:等待玛奇朵:印记 拿破仑蛋糕 < Napoleon cake > 拿破仑蛋糕跟拿破仑其实没有关系,说法之一是由於它的英文名Napoleon,其实是Napolitain的误传,指一种来自意大利Naples的酥皮名字,至今被写作Napoleon而已。我倒觉得它比较像一首歌曲,把叉子一舀下去,酥饼便应声裂开,发出清脆的声音,每吃一口,都像敲响一个音符。

拿破仑蛋糕的法文名为Mille feuille,即有一百万层酥皮的意思,所以它又被称为千层酥,它由三层啡色的千层酥皮,夹两层吉士酱制成,材料虽然简单,但酥皮的制作过程却极繁复,师傅要把搓好的面皮不断重复对摺,这样焗出来的酥皮才够松化。拿破仑蛋糕配上鲜果是最理想的组合,不少师傅爱在酥皮之间加上新鲜的士多啤梨或芒果,令味道更加丰富而清甜,甚至有人会用忌廉代替吉士酱,口感同样不俗。

吉士蛋糕Cheesecake吉士蛋糕,或起司蛋糕、芝士蛋糕,是西方甜点的一种。有着柔软的上层,混合了特殊的吉士,如 ricotta cheese,或是 cream cheese,再加上糖和其它的配料,如鸡蛋、奶油和水果等。

仔细研究研究,黑森林说穿了,真的只是一种“没有巧克力的樱桃奶油蛋糕”。相传古早以前,每当黑森林区的樱桃丰收时,农妇们除了将过剩的樱桃制成果酱外,在做蛋糕时,也会非常大方地将樱桃塞在蛋糕的夹层里,或是一颗颗细心地装饰在蛋糕上。

而在打制蛋糕的鲜奶油时,更会加入不少樱桃汁~而这种以樱桃与鲜奶油为主的蛋糕,从黑森林传到外地后,也就变成所谓的“黑森林蛋糕”了!虽然目前德国大部份的糕饼师傅在制做黑森林时,也会使用了不少巧克力,不过黑森林蛋糕真正的主角,还是那鲜美丰富的樱桃哦!以前德国曾出现消费者因某家黑森林蛋糕的樱桃含量太少而提出控告的案例~也因此德国政府对这种国宝级黑森林,也作出了相关的规定,像是黑森林蛋糕的鲜奶油部份,就至少得含有80克的樱桃汁才行喔!所以黑森林呀,真的不是代表黑黑的意思啦。而黑森林蛋糕,更不是巧克力蛋糕的代名词喔!黑森林是位于德国西南的一个山区,从巴登巴登Baden Baden往南一直到佛来堡Freiburg这带,都属黑森林区。

今天即使来到黑森林,并不见得到处都能幸运地尝到没有巧克力的黑森林蛋糕,不过有机会在此地享受黑森林时,不妨细心留意蛋糕里的小樱桃,让自己重新认识黑森林外,别忘了也感受一下那份藏于味蕾深处的新鲜感哦!蛋挞Egg Tart蛋挞,英文叫custard tart,custard是一种用牛奶鸡蛋和糖做成的冻,中国人称其为蛋,tart则取其音。这种蛋挞早在中世纪就出现了,不过看上去跟现在的蛋挞会很不一样。

按照现在的做法,皮会很软;中世纪做蛋挞是既没有蛋挞模又没有齿轮切割器,蛋挞皮要用手捏起来,所以蛋挞皮发得很硬,吃中世纪的蛋挞其实是在吃蛋汁而不是吃皮。还有另外一个原因,就是做蛋挞皮要放不少糖,中世纪糖很贵,所以有糖也只是加到蛋汁里,至于外面的壳则给穷人和乞丐吃或者扔掉。

中国人知道蛋挞这个东西是在香港被割让后,英国人的蛋挞传到了香港,香港人便开始仿制,甚至比英国人做得更好。蛋挞店除了蛋挞外还卖另外两样东西:奶茶和咖啡。

那时候的蛋挞要比现在的蛋挞大两三倍,甚至有一段时间,一个大蛋挞一杯咖啡或奶茶成了香港人标准早餐。六十年代香港逐渐富裕起来,香港人开始在蛋挞里加燕窝鲍鱼之类,“大补”;但过了几年这种蛋挞又没有了。

有人说蛋挞可以反映香港的经济。按照英国传统做法,蛋挞皮和蛋汁里都要加肉蔻,但香港人似乎不大喜欢吃这种有点辛辣味的蛋挞,所以现在香港茶楼里蛋挞都比较清淡。

蛋挞皮有两种:一种是酥皮,英文叫puff pastry,是一种一咬下去面渣四溅的蛋挞皮;另外一种便是牛油皮,英文叫shortcrust pastry,要加很多黄油,因此有一种曲奇的味道。一开始在香港只有酥皮,后来泰昌饼店(一家香港很有名的蛋挞店)用曲奇面团做蛋挞皮,大成功。

现在香港做蛋挞做得好的,一家就是泰昌饼店,一家是檀岛饼店。泰昌主要做牛油皮,而檀岛主要做酥皮。

香港最后一任总督彭定康(Chris Patten)特别青睐泰昌蛋挞,所以泰昌蛋挞又被叫做肥彭蛋挞。檀岛蛋挞皮。
